California’s Chandon was founded in 1973 by Moët & Chandon to produce high quality sparkling wine in Napa Valley. Using the traditional grapes of Champagne, Chardonnay, Pinot Noir and Pinot Meunier as well as classic sparkling wine techniques, Chandon creates spectacular California sparklers.

 

For spring Chandon teamed with designer Carol Lim to create a bottle to house its rosé. Carol Lim describes her bottle as, “This design reflects communication and spending time with friends. I think it’s one of the most important things you can do…when you’re catching up, new ideas spark,” said Lim. In joining the #ChandonSquad, Lim becomes a member of a like-minded group of fun-loving, sophisticated Chandon brand advocates who enjoy catching up with friends over a glass of bubbly. They are passionate about their careers but always have time for their besties.

RoseChandonLim is a pretty light salmon color with tight tiny bubbles rising to the surface. It has nose tingly aromas of peach, strawberry, cranberry and kiwi. The lively palate features crisp lemon and kiwi acidity, ripe Georgia peach, pear and red delicious apple. The acidic finish has a great mouth drying effect that leaves you mouth wanting more.

 

Chandon, Rose, Limited Edition Carol Lim bottle, California easily pairs with herb roasted whole chicken with roasted sweet potatoes. Another great pairing would be grilled salmon with charred asparagus and German potato salad. Or think spring with a light Penne with garlic and oil with diced tomatoes and poached Maine Lobster.
